Equipment

  • A mixing bowl
  • A whisk or electric mixer
  • A serving dish or individual cups
  • Knife and cutting board

Ingredients

  • 1 ½ cups 360ml milk – Whole milk or almond milk for a creamy texture
  • ¼ cup 30g pistachios – Shelled and unsalted, finely ground
  • 2 tbsp honey or maple syrup – For natural sweetness
  • 2 tbsp cornstarch – Helps thicken the pudding
  • ¼ tsp vanilla extract – Enhances flavor
  • 1 cup 150g red or green grapes – Halved, for a juicy contrast
  • 1 tbsp unsalted butter optional – For extra richness

Instructions

  • 1️⃣ Blend the pistachios – Use a food processor to finely grind them into a powder.
  • 2️⃣ Heat the milk – In a saucepan over medium heat, warm the milk, ground pistachios, and sweetener until steaming.
  • 3️⃣ Thicken the pudding – In a small bowl, mix the cornstarch with 2 tbsp of cold milk until smooth. Slowly whisk it into the saucepan.
  • 4️⃣ Stir continuously – Cook for 3-5 minutes, stirring constantly, until the mixture thickens. Remove from heat and stir in the vanilla and butter.
  • 5️⃣ Cool & serve – Let the pudding cool slightly, then pour into serving bowls. Top with fresh grapes and refrigerate for at least 30 minutes before serving.
