Ingredients

  • 1-2 medium zucchini
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional seasonings: Garlic powder Italian herbs, or grated Parmesan

Instructions

  • Prepare the Zucchini: Wash and dry your zucchini, then slice it thinly—about ⅛ inch thick. Thinner slices mean crispier chips! A mandoline slicer is helpful here for consistent results.
  • Season the Slices: Place the zucchini slices in a bowl, drizzle with olive oil, and toss to coat evenly. Sprinkle with salt, pepper, and any other seasonings you prefer. If you like a cheesy flavor, add grated Parmesan.
  • Preheat the Air Fryer: Preheat your air fryer to 350°F (175°C) for about 3 minutes. This helps to ensure even cooking.
  • Arrange and Cook: Lay the zucchini slices in a single layer in the air fryer basket. Avoid overlapping to make sure each chip gets crispy. Cook at 350°F for 8-12 minutes, checking halfway to shake the basket for even crisping.
  • Check for Crispiness: Cooking times vary by air fryer model, so start checking at the 8-minute mark. If you want extra crispy zucchini chips, keep them in for up to 12 minutes.
