Ingredients
  

  • Ground Beef: 500g 80/20 lean-to-fat ratio for juicy patties
  • Tortillas: 8 small flour or corn tortillas
  • Cheese: 200g shredded cheddar pepper jack, or Mexican blend
  • Toppings:
  • Lettuce: 1 cup shredded
  • Tomato: 1 medium diced
  • Onion: ½ small thinly sliced
  • Pickles: ¼ cup sliced
  • Seasonings:
  • Salt: 1 teaspoon
  • Black Pepper: ½ teaspoon
  • Chili Powder or Cumin optional: ½ teaspoon each
  • OPTIONAL TOPPINGS
  • Pickled jalapeños: 2 tablespoons
  • Avocado: 1 small sliced
  • Salsa: ¼ cup

Instructions
 

  • Prep: Divide ground beef into 4 balls and season with salt, pepper, and optional spices. Warm tortillas.
  • Heat Pan: Preheat a skillet over high heat until very hot.
  • Smash Patties: Place a beef ball on the pan and smash it thin with a spatula. Sear for 30-45 seconds until edges crisp.
  • Flip & Melt: Flip the patty, add cheese, and cover to melt for 10-15 seconds.
  • Assemble: Place the patty on a tortilla, add toppings, fold, and serve!
