Prepare Your Ingredients
Dice chicken into uniform 1-inch pieces
Ensure rice is cooled to prevent clumping
Beat eggs in a separate bowl
Measure out all seasonings and vegetables
Preheat the Blackstone Griddle
Heat griddle to medium-high temperature
Ensure surface is clean and lightly oiled
Cook the Chicken
Spread 1 tablespoon sesame oil on the griddle
Add diced chicken
Season with salt and pepper
Cook until golden brown and fully cooked (about 5-6 minutes)
Remove chicken and set aside
Prepare the Eggs
Create a small space on the griddle
Pour beaten eggs
Scramble eggs until fully cooked
Move to the side of the griddle
Fry the Rice
Add remaining oils to the griddle
Spread rice evenly
Allow rice to crisp up (2-3 minutes)
Stir and flip to create golden, crispy edges
Combine and Season
Mix chicken, eggs, and rice together
Add frozen vegetable blend
Pour soy sauce over the mixture
Stir and cook for an additional 2-3 minutes
