  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil
  • 4 cups cooked rice cooled
  • 3 tablespoons soy sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup frozen peas and diced carrots blend
  • 3 large eggs lightly beaten

  • Prepare Your Ingredients
  • Dice chicken into uniform 1-inch pieces
  • Ensure rice is cooled to prevent clumping
  • Beat eggs in a separate bowl
  • Measure out all seasonings and vegetables
  • Preheat the Blackstone Griddle
  • Heat griddle to medium-high temperature
  • Ensure surface is clean and lightly oiled
  • Cook the Chicken
  • Spread 1 tablespoon sesame oil on the griddle
  • Add diced chicken
  • Season with salt and pepper
  • Cook until golden brown and fully cooked (about 5-6 minutes)
  • Remove chicken and set aside
